As-salaamu ‘alaikum.

This is a special cooking blog, linked to my recent video. The recipe I’m sharing with you is barely soup. As a lot of you know, barley has a lot of healthy and revitalising qualities and was particularly recommended by our Prophet Muhammad (salallahu ‘alaihi wa sallam) as a good food source.

 

This barley soup will be made using lamb, but you can choose an alternative meat source or try to make it without meat if you are vegetarian, although I have never tried it this way.

 

Ingredients:

About 1.5lbs of lamb meat

8-9 tomatoes blended – clean the tomatoes, take out their seeds, put them in the blender and then put the blended pulp through a sieve to get the below:

2 tbsp Tomato puree

60 grams of butter

Salt to taste

4 sticks of cloves

2 tsp of Coriander seeds

4 Bay leaves

2 Cinnamon sticks

2 tsp of Cumin

½ tsp of whole Black pepper

2 Cardamom seeds

½ tsp of Caraway seeds

Small piece of peeled ginger

250 grams of Barley

Method:

 

Put the meat in a saucepan and add about 8 mugs of water and put on to a medium heat and wait for the water to boil.

Add all the spices into the food infuser:

Whilst the water boils, I prefer to remove the foamy stuff that collect at the top with a simple sieve.

Then put the gas on a low heat and add the spice infuser into the water. Put the lid on and leave the mixer to cook for 30-45 minutes.

 

Meanwhile rinse the barley in cold water and then add it to the saucepan once the meat is tender. Stir the mixture and then put the lid back on and leave it to cook for about another hour. After this the barley will become puffy and you know it has cooked, then turn the heat up and add the tomato juice, stir it and wait for it boil again, then cover the saucepan and leave it on low heat for another 10 minutes.

 

I usually prepare a salad during all the waiting around time.

 

After 10 minutes add your tomato puree directly to the mixture stir well and then let it cook for another 10 minutes. Finally add your salt and the butter and stir it in well. Remember to take out your spice infuser at the end.

 

Your soup is made!
